Stewed chicken with bitter gourd makes healthy dinner

Massage the sliced bitter gourd with salt until they  are translucent.  Wash away the salt. Marinate the chopped chicken with salt, soya sauce, sugar, sesame oil and cornflour. 
Fry some garlic and ginger slices. Add in 2 tsp of Chinese black beans and 1 tsp of fermented soya beans. Then add in the chicken and stew till they are cooked.  Add water, chicken stock and oyster sauce to taste.  Add the sliced bitter gourd and cooked for another  10 to 15 minutes till the bitter gourd is soft.  Serve them hot and best  eaten with rice.
